What is "Umami" of Japanese tea?
Theanine, an umami ingredient, is an amino acid peculiar to tea.
It is abundant in early young shoots and extremely low in mature shoots.
In addition, when cultivated by covering it like gyokuro (without exposing it to sunlight), the production of amino acids into catechin is suppressed, so the tea leaves remain rich in theanine. For this reason, matcha and gyokuro have a rich taste, and bancha has a light taste.
It's a very delicious ingredient.
